Service was the name of the game, the lead Ann made the whole dining experience seamless, a story, gave us insight into the chefs intention for us with each bite. Sommolier Aaron was the tone setter for each bite with the perfect pairing. I would advocate for doing the wine pairing. We did one with and one without and as the without, I ordered à la carte glasses which were fabulous- but the pairings were perfectly matched to draw more out from each dish and flavor. Other service staff like Julia and Pavel took care to keep us on our valencian Journey, and the view into the kitchen from every table was a pleasant touch. Each course the twelve diners were presented was full of flavor, balance, and contrast. Ingredients were locally sourced when possible, to share in the life experiences of Chef Andes' and the emotions those dishes evoked. A background story and ingredient list for each course was given by one of the chefs to usher us upon our adventure. To that end, an optional wine pairing was available each with a story of their own.
