STILLROOM is born from the rescue of a 17th-century British tradition: the stillroom, that private space where liqueurs were distilled, preserves were prepared, and artisanal remedies were created. Today, in the heart of the Barrio de los Jerónimos, we reinterpret that philosophy by combining technical signature cocktails with gastronomy and small-format cuisine. Surrounded by Madrid's golden triangle of art —the Prado, Reina Sofía, and Thyssen— we create experiences that go beyond the palate. Each cocktail is a distillation of moments, each dish an expression of technique and creativity.
