Uni Sushi, established in The Woodlands in 2006, bills itself Asian-European fusion, yet its lengthy sushi list features plenty of nigiri and sashimi for purists as well as those happy to depart from tradition. Tempting the latter are some interesting options under the modern makimono section of the sushi menu, such as the playfully named Watch Our Butt roll with tuna katsu, and smoked salmon, and the Angry Dragon with yellowtail, jalapeno, cilantro, and habanero-infused tobiko. One of the more popular big plates is the beef rolls, shaved rib-eye with avocado, yam, and a teriyaki glaze.

With the 2018 opening of Nobu at the Galleria, Houston claimed its own spot in the famous international sushi empire built upon the concept of Peruvian-Japanese fusion. Diners who are already familiar with the Nobu brand will find all its signatures are naturally on the menu at the 280-seat Houston venue, among them the iconic miso black cod and yellowtail sashimi with jalapeno. When chef brothers Chris and Alex Kinjo opened MF Sushi in Houston's Museum District in 2015, it caused a stir among diners familiar with their previous local venue and acclaimed original Atlanta restaurant.
