Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

We were in town for business. My husband and I decided to give Carlo and Johnny’s a visit after seeing it was one of the top 100 most romantic restaurants. There was not one thing I would change about our visit. The mansion is stunning and the details are incredible, we had wonderful cocktails and our food was some of the best we’ve ever had. The fillet was so tender it melted in your mouth, the mac & cheese is out of this world and I am the mac & cheese connoisseur lol. The Sliced Wagyu beef sandwich was seriously ridiculously amazing. We finished off dinner with the butter pie and can I just tell you it rivals any of the most amazing desserts you have ever had in your entire life. The staff were so gracious and took amazing care of us. Our server Sara was simply top-notch. She gave amazing recommendations and we loved every one of them. She took pictures for us. She told us of the history of the house itself and her attention to detail and timing made the experience, truly memorable. We will definitely be back.

Le Yaca began in 1964 in Courchevel, a tiny, country village in the French Alps. Daniele Bourderau & Gerard decided it would be fun to open a small restaurant. When friends learned of their plans, they told the hopeful restaurateurs they were crazy to think people would drive eight kilometers on a winding, icy road for dinner. Daniele and Gerard hesitated for three months and then decided, “yaca le faire,” a contraction of the French phrase “il n’y a qu’a le faire,” which basically means, “let’s do it.” They called the restaurant Le Yaca as a gag, but the name caught on with customers who were amused by the pun and contributed to the restaurant’s lore by inventing “yaca-isms” of their own: yaca y aller (let’s go). Daniele came to the United States and opened Le Yaca in Williamsburg. Daniel Abid bought Le Yaca in 2001. Daniel worked and trained in such prestigious places as “Le Pre Catelan” and “Lenotre” in Paris; “L’Amandier” and “Roger Verge," and to top it all off, “Alain Ducass
