Fish & Meat simply focusing on the best produce, and techniques, to deliver fresh seafood, homemade pasta and farm-to-table cooking. In recent years we have seen a constant wave of trends hit Hong Kong, one after another with each new wave eclipsing the last; nouvelle cuisine, fusion, molecular, farm-to-table and nose-to-tail. Ultimately, all good things, however we are naturally reverting back to the beginning of the cooking cycle. This does not mean that everything must be forgotten.
