What continues to amaze me about Chambers is how perfectly they balance consistency and creativity. The classics are so good that you never get tired of ordering them — and yet the menu evolves just enough to keep every visit exciting. The menu is short, thoughtful, and every new dish somehow turns into a memorable discovery. This time, the scallops were stunningly fresh and delicate, but the true standout among the starters was the squid with fava beans and hazelnuts — subtly spicy, incredibly balanced, and simply exceptional. On the mains, the classics once again reminded us why they’ve become staples: the cavatelli remain one of the most satisfying pasta dishes in NYC, and the chicken was flawless as always. The spring sausage was wonderfully original and absolutely delicious. We also shared both sides — the potatoes and the carrots — and every single plate was finished to the very last bite. Desserts were every bit as memorable. The mascarpone continues to be a crowd favorite, but the real revelation was the chocolate pecan ice cream with amaretto. It was so outrageously good that we immediately ordered a second one. And beyond the food, Chambers continues to master something that very few restaurants in NY truly get right: atmosphere. The noise level is always perfect, the lighting warm and elegant, the room lively without ever becoming overwhelming. The staff is consistently thoughtful, kind, attentive, and present exactly when needed without ever feeling intrusive. A very special mention, as always, to Pascaline. Beyond curating one of the most exciting, intelligent, and fairly priced wine lists in New York, she brings a level of precision, generosity, and warmth that feels genuinely unique in this city. Last night she introduced us to a beautiful Irouléguy and also spoiled us with stunning dessert wines. None of the recent recognition Chambers has received feels accidental.
